i know sprokets go -1 +2 but what if your bike comes stock with a 14 48 is it possible to stay at the 14 and move to a say 54 or 55?

You can get custom sprockets to just about any size you need. Sounds like you are looking to go bigger on the rear sprocket. Check out Vortex.com. They should have what you are looking for. If not, check you local bike shop. They can find one that fits and has the specs you want. Not to mention they'll put it on for you.
